I mentioned that I threw out my smoker because it was on its last legs and this lady at church gave me an almost new electric smoker. Today I threw a barbecue with it, but it was my first time using an electric one, so the meat turned out a tad dry. But it was good. Country style ribs marinated in homemade barbecue sauce and slow smoked with pecan shells. You can use an electric smoker year 'round and I intend to. :)

So Diablo goes to church huh? :D I never heard of slow cooking with pecan shells. hmm Darn where my son lived his yard was full of pecan trees, to bad he isn't still there. I was hoping to send my mom some pecans for christmas. :( I grill out all year round. We have the gas grill on our deck.

If you could possibly make it to a food place called Priesters (sp?) they would let you have a truckload of pecan shells for about five bucks. They're one of those catalogue food shops and are located near Montgomery, Alabama. They have an online catalogue which should be searchable. I think about going there myself, but I have a few pecan trees dropping them right outside. I'm not sure about using pecan shells with a gas grill, but it should work. You have to soak the shells overnight. Diablo gets roped into church sometimes.

Roped into it huh? Do you live in the south? I am in the Atlanta area.

My parents got themselves a smoker that they cook a chicken out of once a while. There are different kinds of scented wood that you can buy so your meat will soak up the smell which add a good taste. You should check out your options on this because it does add a good flavor to your meat.

Charcoal actually gives a better flavor than gas, but you can use a gas grill year 'round.

I'm a southerner by birth, but I lost the accent after spending a lot of time in Lakewood, Colorado. Flippin' Broncos didn't win the super bowl until after I left.

A smoker is kind of like a grill, except designed to produce more smoke using different hard woods. With some smokers, you can produce smoke without much heat in order to create a strong smoke flavor then amp up the heat to cook the meat. I prefer a moderate smoke flavor myself. Some smokers have a water pan which serves two purposes. First, it keeps the meat from getting dry;secondly, it keeps the grease from dropping on the fire. You don't want to use matchlight charcoal with a smoker equiped with a water pan

I think we better buy a boat soon. It seems like it is always raining!! You probably are under a watch, I think there are warning west of Atlanta.

That's a matter of preference Howard. Also, a high end grill is better than a low end smoker and vice-versa. I prefer a smoker myself because you can use hardwoods to flavor the meat. I usually use pecan shells for that.

We had a tornado warning. Now I know there are no sirens around these parts. So I think I will sleep lightly tonight. Especially since my oldest son is out there doing god knows what! I have a son that I raised and warned about our little family history of drug and alcohol abuse but do you think he would listen? I wish I could just slap him upside his head! He is 6'4 so I would have to stand on a chair :D

He's not going to listen to you anymore than you listened to your mother at his age. Anyway, it'll be a constant source of aggravation and worry for a while, but then something will happen to get him to thinking that he shouldn't be doin' that crap. Not sure how long that would take though.

Yeah I think of how long it took me to learn and it scares me more!! :eek:
